My mother fed five children on a budget that makes me think she was a miracle worker. Many of her recipes were things that were easy to make, and fed a family of seven. I've decided to post a few of them here, for your enjoyment.


Tater Tot Casserole- Mom's way. thumbup1

One pound ground beef

Two cans mixed vegetables

Two cans Cream of Mushroom (or any similar soup- chicken, celery etc.)

One package of frozen tater tots/potato puffs

Bag of shredded cheese, or slices of cheese, whatever you have on hand.

Preheat oven to 400 (or whatever temp the tater tots call for on the package)

Brown ground beef- add spices to taste. I chop and onion and mix it in while cooking the hamburger.

Mix ground beef, veggies, cream of mushroom soup together in a 9X13 glass baking pan (deeper pan works better)

Place in oven until the mixture is heated through, usually fifteen or twenty minutes.

Remove from oven, cover with cheese and then tater tots.

Return to oven and bake 20-30 minutes, or until tots are done.

Let cool ten minutes or so before serving.

We make this and have left overs for lunch the next day.

Chicken and Wild Rice
Haps posted a chicken casserole recipe so I figured I would post my favorite one. tongue

It's quick and simple to prepare, which with our busy lifestyle is a plus.


Ingredients-

1 can cream of chicken soup

1 can cream of celery soup

1 can cream of mushroom soup

1 box of Uncle Ben's Long Grain & Wild Rice

3 or 4 fresh chicken breasts- boneless


Preheat oven to 350 degrees Fahrenheit.

Mix all ingredients except chicken breasts together and pour into a 9 x 13 casserole dish.

Place chicken breasts on top of rice mixture and place into oven. Bake 45 mins to 1 hour, or until chicken breasts are done.

Alternate Recipe

I often buy a whole fresh chicken and boil it, then use the chicken and resulting stock for recipes during the week.

When doing this I use 1&1/2 to 2 cups of precooked chicken, chunked, and mix it directly into the rice mixture. Reduce cooking time to 25 to 30 minutes.

Easy Breakfast Casserole

Four eggs
3 cups milk
twelve slices of bread
1lb pork/breakfast sausage (can add or substitute ham, bacon etc.)
cheese (either shredded 8oz or slices)
9x13 casserole pan (deep pan best)

Brown sausage and set aside.

Whip eggs and milk together and set aside.

Spray bottom of pan with non stick cooking spray.

Spread six slices of bread on bottom of pan.

Cover with half of the sausage or other meat.

Add a layer of cheese.

Add the remaining six slices of bread.

Add the rest of the meat.

Pour the egg and milk mixture over the whole thing, then cover with another layer of cheese.

Let set overnight (8 hours) in the refrigerator.

Bake at 400 for thirty to forty minutes. If using a glass dish DO NOT preheat oven as the extreme temp differences can make it crack.
