Dum's Recipes (Shhhhh Don't tell him I told you)
Since everyone keeps bugging Dum for recipes, I figure I'll steal em, and post em here for all of ya!

Here's the first, a favorite of mine that never fails to please a crowd.


Stuffing wrapped Sausage balls

1/2 package stuffing (regular)
1/2 package stuffing (cornbread)
1 lb ground hot sausage
Veggie oil

Portion sausage into 1" size balls, fry in skillet with a small amount of vegetable oil until brown.

Prepare stuffing as directed on package.

While stuffing is still warm, mold it around the sausage ball, completely covering it.

Deep fry in fryer or skillet until stuffing is dark brown and crusty.

We generally serve these with a cracked pepper mill gravy, what some would call "country gravy" And he cheats. Use the packaged stuff, just add water w00t

French Roasted Onion Soup
Another Famous Dum recipe. 100% Vegetarian

4 or 5 large Spanish onions, cut lengthwise into thin slices (about 8 cups)
8 cloves garlic, minces or pressed
2 tablespoons olive oil
4 bay leaves
1 teaspoon dried thyme
3/4 cup dry white wine ( i reg. substitute a light beer)
4 cups vegetable broth (3 cans)
4 cups water
2 table spoons soy sauce
3 table spoons dark molasses
black pepper to taste


preheat oven to 370 degrees
place onions in a baking dish, one layer thick
add garlic, oil, bay leaves, and thyme
roast 45 to 60 minutes, stirring every 15 minutes, until onions have softened and slightly browned
remove from oven
add wine (or beer) to the baking dish, stir well to deglaze
transfer roasted onion mixture to soup pot
add stock, water, soy sauce, and molasses
cover, bring to a boil
lower heat, simmer for 30 minutes
add pepper to taste

Never thought about molasses. I'll have to try it, sounds delicious. Oh and so do the wrapped sausage but no way would I cheat on the country gravy. Grandmaw would kill me! w00t

Savory Sweet Potatos
3-4 Large Sweet potatos (cut into chunks)
1 very large white or yellow onion (chopped)
2 cloves garlic (minced)
2/3 cup chicken stock
2 tbsp olive oil
good helping of dried dill, rosemary, salt and pepper

Combine all ingredients (except chicken stock) in glass baking dish

Bake @ 400F until edges slightly brown

Stir

Bake some more, until tender

Remove from oven, deglaze pan with chicken stock using as little as possible


(I totally hate Sweet Potatos, but this recipe makes them less sweet, and more savory, perfect for pork or poultry dishes)

ok peachy, i have been putting this for a year now i guess...

Red Ale Stew

1 beef roast (doesnt matter what cut, i prefer bottom round)
6 red potatoes
1 lb button or crimini mushrooms
2 onions
2 cloves garlic
6 pack (at least) your favorite red ale
fresh ground pepper
salt
fennel seed
coriander seeds
nutmeg
olive oil

cut roast into 1" cubes and lightly brown in olive oil using a cast iron dutch oven.
chop onions and add to browned meat
smash garlic cloves and add to pan
add mushrooms (i like mine whole)
quarter potatoes and add to pan
add about 1/2 tsp fennel seeds and coriander seeds
add a pinch of nutmeg
add lots of fresh ground pepper (i like it COARSELY ground)
start opening the ale and adding to pot until all contents are covered
add 1/2 tsp salt
cover and place in a 300 degree oven
after an hour, stir and taste ... add more salt if needed
put back in oven and roast for another hour, stir and taste and add more ale and pepper if needed..... continue this process til beef is fork tender and gravy has thickened to your liking
serve with irish soda bread or sourdough in a pinch
