Chilli Challange.
It's not easy to get great chilli in the UK, a few new places have opened up here but I am rather strapped for the time being. As I know you Americans, Centrel Americans and South Americans make the best chillis on goods green earth I was wondering if you had a cool recipie you could share with me.

If you can that would be really sweet of you and my full belly and burning...somewhere will thank you forever xxx

drool o0o0o0 I do make the best chilli everrr heres my secret:
brown your ground beef and onions add some fresh mushrooms and cook till done.
..add salt en pepper to taste..add as much chilli powder as you can handle usually about 3/4 tblespoons then add:
1 big can kidney beans
1 can brown beans
1 large can diced tomatoes
about 8 slices pre cooked bacon cut in bite sized chunks bring to a boil and simmer for about an hour.. enjoy smile let me know if ya try it k smile

my wife never makes it the same way twice...she eyeballs all measurements...it takes 2 days to complete cause the pulled pork cooks for 6-8 hours on a real low setting but if you want to mess around with it she uses:

ground beef and pulled pork
garlic
onion
pinto and kidney beans
mushrooms
medium to hot green chilies (hot if shes pissed off at me)
tomato paste/sauce
dark beer
salt.. pepper.. cumin.. hot mexican powder seasoning(says pico de gallo seasoning on the label) cinnamon and beef base(stock)


she makes one BIG ASS 24qt(+/- 23 litre) pot of it in late september or early october we freeze it in double serving size containers....lasts most of the winter

the chili gets topped with

the chili gets topped with melted jalapeno cheese served with corn chips pico de gallo and of course BEER..... great for watching the game!!!

Mine is a lot more simple, but then again, Mom can't handle much in the way of spices, so we keep it pretty tame. BTW - many feel that chili should contain no meat. I personally disagree, but to each their own.

Mine usually consists of:

2 pounds of lightly browned ground beef, drained
one large mild (or sweet) onion, chopped
one large green pepper, chopped
a can of diced tomatoes
a large can or bottle of tomato juice or V8 (don't know if you have that in the UK)
a large can of red kidney beans
cayanne pepper (just a little)
chili powder (a bunch)
cumin (essential!)
salt (to taste)

Very similar to above
It's all about getting flavour into the dish which is down to how it's cooked

Onion
Red pepper
Green pepper
Garlic
Cumin
Dried oregano
Kidney beans
Tinned toms
Tom puree
Lean beef mince
Quorn mince
Salt and pepper
Cayenne pepper

Chop onion and pepper finely
Fry mince to brown and remove. Fry pepper and onion to add colour and then add mince again. Add garlic and cumin, cayenne and pepper for a minute.
Add toms, beans, puree, quorn and splash water. Bring to high heat then for simmer for as long as you can. Add salt to taste. Then even better cook day before or hours before required, refrigerate and reheat, a marinated chilli tastes much better!
Note, I add quorn as it thickens things up and absorbs flavour well.

2 cans of RANCH style beans (has to be ranch style.)

1 small can of original rotella tomatoes

1 pack of chilli seasoning

1 lb burger (can also use 50/50 burger and sausage.)
