Thanks Gio for the recipe. I understand it perfectly. My biggest problem is like how you said: ‘knowing when it is perfect, so it isn’t hard as brick or to moult’. Just the perfect mix of flour and potato. But I do the squeezing and I do mix. I so need to find a kitchen to try it out (hmmm). I’m so eager to make some Gnocchi. And Gio, I will tell you how it goes (if I don’t set some kitchen in fire). And maybe I can cook to impress now. Of course you will get all the credits. And about the ‘pizzamaker dance’. I don’t have a clue how it goes. SOMEONE has to show it to me. But I’m sure it’s not an Italian dance. So to all the NN’ers who does the pizzamaker, show or describe it to us European hippie dancers.
