OK I promised to put up this recipe for some of my NN friends and never got around to it. Well I made the them again today and before I put the recipe up again I thought I better actually get it up here. I got this recipe from a friend of mine from school. Warning they are GOOD first off but you may have to adjust a couple of the ingredients depending on weather and fat content of the peanut butter. Preheat oven to 350 degrees Fahrenheit 1 cup Peanut butter can be either chunky or creamy (I use reduced fat version of either) 1 cup Unsalted Butter 1 1/4 cup sugar 3/4 cup brown sugar slightly packed 2 large eggs lightly beaten 1 cup flour (your chioce of type) adjust for additional by the 1/4 cup 1/4 teaspoon salt 3/4 teaspoon baking soda 3/4 teaspoon baking powder 1 cup oatmeal again adjust by 1/4 cup if more needed My twist I add a bag of chocolate chips Instructions Cream together peanut butter and butter, then add sugar and egg mix till well blended t Mix together flour, baking powder, baking soda and salt, sift and then add to wet mixture. Then add oatmeal to the mixture. The dough will be a stiff mixture so don't panic. Then fold in chocolate chips. drop by the cookie scoop on to greased or pam spayed cookie sheet. Bake in oven for 8-10 minutes or till they are to desired doneness. I bake mine a bit longer because I love crispy cookies. Let cool for a minute on the baking sheet then remove to wire rack to cool. Then store in airtight container. Makes 3 dozen or more cookeis per batch depending on the size of the cookies. |
