chicken pasta
Dead easy......cook chicken mushrooms spinach ....add pasta (I use penne) and stir through philadelphia cooking cream ...add cashew nuts ...serve

2 12" pizza things
pizza..

Its a soft dough...not sticky, but uber floppy

2 C bread flour
1 t Salt
1 1/3 C water

1 T yeast..
1 T honey, powdered honey or whatever to feed yeast..

proof the yeast..


Or make a sour dough starter....

Somewhere in there is olive oil... making a dough ball, time to rise.. kneading, forming..etc.

Hustling up pizza sauce, making it or using pesto.. I just do whatever, sometimes just olive oil and salt..

Do Cooking Tips Count?
Just wondered if cooking tips counted in this? Cos i have one smile

Don't you just hate it when you spray your baking pans/trays with non-stick cooking spray and you get over spray all over your work tops and equipment?
Try doing this - If you have a dishwasher, open the door and place your trays/pans to be sprayed on the inside of the door and spray them. When you run the dishwasher the oil over spray will be diffused and washed away, leaving your worktops nice and clean wink

ok so im gunna put a pipi soup recipie up with pics
this is kiwi styles but can be used anywhere you can collect pipies
PLEASE ALWAYS TAKE JUST YOUR LIMIT ALLOWED AND THE RIGHT SIZED ONES
PIPIS DO FREEZE SO SHELL THEM AND WASH THEM AND POP THEM IN FREEZER AS BACK UP

Pipi soupPreparation time: 45 minutes
Kaimoana at its best.


Cooking directions
•Mince the pipi and place in a saucepan with the water, onion and parsley. Simmer gently for 30 minutes.
•Press through a sieve or puree in a blender and return to pan.
•Blend 2 tablespoons of milk with the cornflour and add to pipi puree with remaining milk, oil and nutmeg.
•Bring to the boil while stirring continuously.
•Add salt and pepper to taste.
•Serve with crusty bread.
Ingredients
3 3/4 cups freshly shelled pipi

3 3/4 onions, chopped

7 1/2 cups water

3 3/4 tablespoons olive oil

3 3/4 pinches salt

7 1/2 pinches pepper

7 1/2 tablespoons cornflour

3 3/4 cups low-fat milk

11/12 teaspoon nutmeg

7 1/2 tablespoons parsley

OK ITS KINDA LIKE THE ONE I MAKE BUT YOU CAN ADD CHICKEN STOCK

Coconut Cake!
As promised. This is the first time I have made this and it tastes very yummy.

You will need the following:
Non-stick cooking spray, 1 Tbsp. All purpose flour,
1 (18.25)oz pack light white cake mix, 1 cup low-fat buttermilk
1/4 cup vegetable oil 1 tsp. Coconut extract
2 lge egg whites 1 lge egg
************************************************************************
1/4 cup flaked sweetened coconut 1/4 cup packed light brown sugar

************************************************************************
Cream Cheese Frosting:
1 lb cream cheese at room temp. 1/2 lb (2 sticks) unsalted butter at
room temp.
3/4 tsp. pure vanilla extract 1/4 tsp. pure Almond extract
1 lb confectioner's/icing sugar sifted 6 oz sweetened shredded
coconut.

Directions:
Preheat oven to 350F
Coat a 13 x 9 inch baking pan with cooking spray, dust with flour. (I used a bundt pan as I wanted a round cake)
Combine the cake mix & the next 5 ingredients (cake mix through egg ). Beat at low speed of a mixer (I used my hand mixer) for 30 seconds. Beat at medium speed for 2 minutes. Pour half of the batter into prepared pan. Mix together the 1/4 cup of coconut with 1/4 cup of brown sugar and sprinkle over the mixture in your pan, then top with the remaining 1/2 of the batter. (The batter may be a bit thick).

BAKE at 350F, centre rack of oven for 30 minutes or until a wooden tooth pick inserted in the centre comes out clean.
Cool the cake completely in the pan.

Turn out onto serving plate (if using the round tin) or else leave the cake in the oblong pan.

For the Cream cheese frosting: Beat the butter and the cream cheese until well combined, add the vanilla and almond extract mix. Whisk in the powdered sugar. Spread the Cream cheese frosting over the cake then sprinkle with the coconut.

Salad Dressing
Are you tired of paying good money for salad dressing who's ingredients reads like it came from a chemical factory? Well, fret no more, you can make a delicious salad dressing right in the comfort of your own home! And it's simple.

1/4 cup wine vinegar
appr 1 teaspoon sugar
1/2 cup olive oil (or oil of your choice)
1 teaspoon Dijon mustard
1 teaspoon mayonnaise
1 shallot, chopped (or about a tablespoon of the white part of a green onion or any mild onion. Shallot is best)
about 1/4 teaspoon fresh ground black pepper
a pinch of salt if you must (I make mine sans salt)

You can use your food blender or a whisk. If using a whisk chop the shallot fine. If using the blender, put the shallot in the blender and give it a short ride.

Dissolve the sugar in the vinegar. The sugar will take much of the bite out of the vinegar. How much sugar to use really depends on (a) the acidity of the vinegar, and (b) your personal preference. Once the sugar is dissolved, give it a little taste, if it has too much of a bite (it should have some bite) add a little more sugar.

Put the vinegar, mustard and mayo, pepper and salt, if using, in the blender bowl (the shallot is already in it). Turn it on and slowly stream the oil in. The dressing is ready to use. Store it covered in the fridge.

For a variation, you can sub a garlic glove or two for the shallot.

yeah I make all my dressings, or at least try to when I can.
The blender does work great for emulsifying the oil.
But when you dont want to dirty the blender.
Get a round bowl, roll up your dish towel to make a nest for the bowl, so it will sit hands free on the counter.
Then whisk while pouring the oil in.
Either that or just put it all in a dressing bottle and shake the shit out of it.
I prefer the whisk or blender though.

Peanut Butter Banana Bread With Chocolate Chips .....
You will need:
3/4 cup Unbleached Flour ............. 1/2 cup Whole Wheat Pastry Flour
6 Tablespoons Brown sugar - packed ............ 6 Tablespoons White sugar
1 teaspoon baking powder ........... 1/2 teaspoon baking soda
1/4 teaspoon salt .............................. 3 medium very ripe Bananas (mashed or whizzed in food processor) 1 teaspoon vanilla extract
1/3 Crunchy peanut butter ............ 2 Tablespoons Plain fat free yoghurt
1 Large Egg ........................................ 2 Tablespoons Canola Oil
3/4 cup Mini semi-sweet chocolate chips (tossed in 1 tblsp flour)

This is what you do:
Preheat oven to 350F. Coat 9 x 5 inch loaf tin/pan with cooking spray, add a strip of parchment paper to bottom of pan for easy removal. Combine flour, sugars, baking powder, baking soda and salt into bowl.
In another bowl OR bowl of mixer, mix bananas peanut butter, yoghurt, egg, vanilla & oil .
Fold in the flour mixture until NO streaks of flour remain, then gently fold in the chocolate chips. Scrape batter into loaf tin. Bake 40 - 50 minutes or until a toothpick comes out with a few moist crumbs.
Cool in pan on wire rack for 15 minutes, CAREFULLY remove from pan and allow to cool completely on wire rack before slicing.
This loaf/cake is very moist and may need a little more time in oven. Nice served with a dollop of cream.

Texas Caviar

2 cans corn
2 cans of black beans
1 cup of celery
1 green or red pepper
1 small red onion
1-2 jalapeños
1/2 cup of oil
1/2 cup of apple cider vinegar
1 cup of sugar (or sugar substitute)
Salt and pepper

Drain and rinse beans and corn
Chop vegetables
Mix sugar, vinegar and oil in sauce pan and boil for 5 minutes
Pour over veggies, corn and beans. Let sit over night or for 4 hours.
Serve with tortilla chips

Ambrosia Tarts - No Baking Involved :)
Ingredients:
1 can (11oz) mandarin oranges - drained.
1 can (8oz) crushed pineapple - drained.
1/2 cup miniature marshmallows.
1/4 cup flaked coconut.
1 cup whipped topping.
4 individual graham cracker crusts/shells.
To Do:
In a bowl, combine the mandarins,pineapple,marshmallows and coconut.
Fold in the whipped topping.
Spoon into the shells. Refrigerate until ready to serve.
