So as some know I'm an avid fisherman and hunter. Some find it kinda disgusting.
Some of my dishes:
Slow cooked elk backstrap
3 pounds fresh elk backstrap
2 cups water
1 cup burboun
2 tablespoons pepper
2 cloves garlic finely chopped
1 cup chopped onion
Salt to taste
Maranade for 4 hours in the refrigerator. Cook slowly at 200 degrees till internal temp reaches 140. Slice and serve with rice.
Bourbon garlic albacore
1 cup water
2 cup jack daniels
1 bulb garlic slices
4 tablespoons pepper
2 teaspoons salt
Place albacore loin or medallions in maranade and maranade for 8 hours. Cook in over at 300 degrees for 15 mins depending on thickness. Be careful its easy to over cook it and dry it out. Or bbq with wood chips I'd you prefer. Serve with green salad and fresh veggies.
