Amazingly Easy Rib Eye Roast

Select yourself a nice rib eye roast, such as the one shown.
Let it come up to room temp (important). Salt and season with a little garlic powder and pepper. Place in a roast pan with just enough water to cover the bottom. Roast at 500 degrees (f) for 15 minutes. Turn down heat to 325 and continue roasting for 20 minutes per pound. At no point should you open the oven door. Remove, tent with foil and let rest for 30 minutes. During the rest period you can make au jus or gravy and have a beer or glass of wine.
