Since Specs is being a big mean bully, here goes. The first recipe in the first cooking thread.

Snickerdoodles

1/2 cup butter softened (no substitutes)
1 cup white sugar
1/2 teaspoon baking soda
1/2 teaspoon cream of tartar
1 egg
1/2 teaspoon vanilla
1 1/2 cups all-purpose flour
----
2 tablespoons sugar
1 teaspoon ground cinnamon

Beat butter in a large mixing bowl with an electric mixer on medium to high speed for 30 seconds. Add the 1 cup sugar, baking soda, and cream of tartar; beat til combined. Beat in egg and vanilla. Beat in as much flour as you can with the mixer. Stir in remaining flour with a wooden spoon. Cover and chill for an hour.

Combine the 2 tablespoons sugar and the cinnamon in a shallow dish. Shape dough into 1-inch balls, roll balls in sugar-cinnamon mixture. Place balls 2 inches apart on an ungreased cookie sheet. Bake in a 375F oven for 8-10 minutes or until edges are golden. Transfer cookies to wire racks to cool.

Chocolate Mousse
Well, really it's supposed to be the filling for French Silk Pie, but who wants crust and whipped cream in the way of the good stuff?

This works best if you have a stand mixer or a hand-mixer plus extraordinary patience.

1/2 Cup butter (room temperature)
3/4 Cup white sugar
2 oz unsweetened chocolate (melted and cooled)
1 tsp vanilla
2 eggs

Cream the butter til fluffy. Add the sugar and mix well. Add in the chocolate and vanilla. Mix well. Here comes the part where you need the stand mixer or a hand-mixer and patience: Add one egg and beat the mixture (THE MIXTURE!) for five minutes. Yes, I said five. Don't look at me like that. Add the other egg and beat the mixture for another five minutes.

SO worth it.
